  • 8 oz. dry rotini pasta
  • 9 oz. hard turkey slices, chopped
  • 6.5 oz. turkey pepperoni, chopped
  • 1 cup canned artichoke hearts, drained & quartered
  • 2 cups cherry tomatoes, halved
  • 1 cup olives, pitted & halved
  • ½ cup pepperoncini, sliced
  • 8 oz. mozzarella pearls
  • ¼ cup red onion, sliced thin
  • ⅓ cup fresh basil, sliced thin
  • ½ cup olive oil
  • ¼ cup red apple vinegar
  • 2 garlic cloves, minced
  • 1 Tbsp Italian seasoning
  • ¼ tsp red pepper flakes
  • Salt & black pepper, to taste

Instructions

  1. Cook rotini according to package instructions until al dente. Drain and cool completely.
  2. In a bowl, whisk together olive oil, red apple vinegar, minced garlic, Italian seasoning, red pepper flakes, salt, and pepper to create the vinaigrette.
  3. Chop turkey slices and pepperoni into bite-sized pieces. Halve cherry tomatoes, slice olives and red onion.
  4. In a large bowl, combine cooled pasta with all ingredients including vinaigrette; toss gently to coat.
  5. Chill for at least 30 minutes before serving to enhance flavors.
