  • 1 lb fresh chow mein noodles
  • 2 cups thinly sliced cabbage
  • 1 cup sliced celery
  • 1 small sliced onion
  • 2 tbsp vegetable oil
  • 2 tbsp soy sauce
  • 1/2 tbsp dark soy sauce
  • 2 tbsp vegetarian stir fry sauce
  • 1 tbsp sesame oil
  • 2 minced garlic cloves
  • 1/4 cup chicken stock
  • 1/2 tbsp cornstarch

Instructions

  1. In a small bowl, mix all sauce ingredients thoroughly.
  2. Bring water to a boil in a large pan and blanch the chow mein noodles for about 20-30 seconds. Strain and do not rinse.
  3. Heat vegetable oil in a large pan over medium heat; sauté onions, cabbage, and celery until softened.
  4. Push veggies to one side and add another tablespoon of oil with the blanched noodles and sauce; toss well to combine.
  5. Serve immediately while hot.
