  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 1 sweet onion, diced
  • 8 oz cream cheese
  • 2 cups shredded sharp cheddar cheese
  • 1 can (10 oz) diced tomatoes with green chiles
  • 2 tbsp taco seasoning

Instructions

  1. Place the chicken breasts at the bottom of your crockpot.
  2. Sprinkle minced garlic and diced onion over the chicken.
  3. Cut cream cheese into chunks and scatter on top.
  4. Pour in diced tomatoes with green chiles and add taco seasoning; stir gently.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. About 30 minutes before serving, sprinkle shredded cheddar cheese on top until melted.
  7. Serve over rice or tortillas, or enjoy as is.
