  • 3 lbs boneless, skinless chicken thighs
  • 1 cup light brown sugar
  • 1 cup soy sauce
  • ⅓ cup herbal tea or chicken broth
  • 2 tablespoons apple cider vinegar
  • ½ teaspoon ground ginger
  • 1 tablespoon honey
  • ½ teaspoon red pepper flakes
  • 4 cloves garlic, minced
  • 3 tablespoons cornstarch
  • 2 tablespoons water
  • Chopped green onions for garnish

Instructions

  1. Place chicken thighs at the bottom of the slow cooker.
  2. In a bowl, whisk together brown sugar, soy sauce, herbal tea or chicken broth, apple cider vinegar, ginger, honey, red pepper flakes, and garlic. Pour over the chicken.
  3. Cover and cook on high for 4 hours or low for 6 hours.
  4. Remove chicken; shred or chop into bite-sized pieces.
  5. Mix cornstarch with water to create a slurry and stir into the sauce. Cook on high for an additional 5–10 minutes until thickened.
  6. Return shredded chicken to the slow cooker, stir well, and serve garnished with green onions over rice or cauliflower rice.
