Crispy Smashed Carrots are a delightful and nutritious side dish that elevates any meal with their golden color and irresistible crunch. These carrots are boiled to tender perfection, smashed for maximum surface area, and then baked until crispy with a savory garlic and Parmesan topping.

  • 1 lb carrots, peeled and cut into thick rounds
  • 1 tbsp olive oil
  • 2 tbsp grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Boil salted water in a pot, add carrot rounds, and cook for 10-12 minutes until fork-tender.
  3. Drain the carrots and let them cool slightly; smash each round on a lined baking sheet with the bottom of a glass.
  4. Drizzle olive oil over the smashed carrots, season with garlic powder, smoked paprika, salt, pepper, and sprinkle with Parmesan cheese.
  5. Roast in the oven for 20-25 minutes, flipping halfway through until crispy and golden brown.
  6. Garnish with fresh parsley before serving.
