  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • ½ cup all-purpose flour (or gluten-free flour)
  • 1 large egg
  • ¼ cup breadcrumbs (or panko)
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • Salt and black pepper to taste
  • Vegetable oil or canola oil for frying

Instructions

  1. If using canned corn, drain it well; if using frozen corn, thaw and pat dry.
  2. In a mixing bowl, whisk the egg lightly, then add all-purpose flour, both cheeses, breadcrumbs, garlic powder, onion powder, paprika, salt, and black pepper. Mix until combined.
  3. Fold in the prepared corn until evenly distributed.
  4. Shape the mixture into small balls or discs.
  5. For frying: heat oil in a pan to 350°F (175°C) and fry each side for about 2–3 minutes until golden brown.
  6. For baking: preheat oven to 400°F (200°C), place bites on a parchment-lined sheet, and bake for about 15–20 minutes, flipping halfway through.
