  • 2 sheets of puff pastry (thawed)
  • â…” cup granulated sugar
  • ½ cup cornstarch
  • ¼ tsp kosher salt
  • 3½ cups whole milk (warm)
  • 6 large egg yolks (room temperature)
  • 1 vanilla bean (or 2 tsp vanilla bean paste)
  • 4 Tbsp unsalted butter (cold, cubed)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat oven to 400°F (200°C) and line baking trays with parchment paper.
  2. Roll out puff pastry sheets to about 9×9 inches and prick with a fork. Place on trays, cover with parchment and another tray for even baking.
  3. Bake for 35-45 minutes until golden brown; let cool completely.
  4. Trim edges to fit an 8×8-inch pan.
  5. Whisk together sugar, cornstarch, and salt in a saucepan. Add egg yolks and mix until smooth.
  6. Warm milk in another saucepan over medium heat without boiling.
  7. Slowly whisk in warm milk into the egg mixture to temper the eggs, then return to saucepan.
  8. Cook over medium heat until thickened (about 5-7 minutes). Stir in vanilla seeds and cold butter until fully mixed.
  9. Assemble by placing one pastry layer in the pan, pouring custard over it, then topping with the second pastry layer. Chill for at least four hours before slicing.
