  • 1 can (28 oz) whole peeled tomatoes
  • 1 ½ cups chicken broth
  • 2 tbsp brown sugar
  • ½ cup heavy cream
  • 10 oz ravioli
  • Fresh basil, for garnish

Instructions

  1. In a large pot, heat olive oil and butter over medium heat. Sauté onions, celery, and garlic for about 5 minutes until softened.
  2. Stir in whole peeled tomatoes and brown sugar; add chicken broth and bring to a gentle boil. Reduce heat, add thyme, and simmer partially covered for 15–20 minutes.
  3. Blend the soup until smooth using an immersion blender or regular blender.
  4. Return the blended soup to the pot and stir in heavy cream; season with salt and pepper.
  5. Add ravioli and cook until they float to the top (about a few minutes).
  6. Serve hot, garnished with fresh basil.
