Ingredients

Scale
  • 2 large boneless, skinless chicken breasts
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup orzo pasta
  • ½ cup sun-dried tomatoes, chopped
  • 2 cups chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 cups fresh spinach, chopped
  • ½ teaspoon red pepper flakes (optional)
  • 1 tablespoon butter

Instructions

  1. Season the chicken with salt, pepper, garlic powder, and Italian seasoning. Sear in olive oil over medium-high heat until golden brown and cooked through (about 5–6 minutes per side). Remove and set aside.
  2. In the same skillet, sauté minced garlic in butter until fragrant. Add orzo and toast for 1–2 minutes.
  3. Stir in sun-dried tomatoes and chicken broth; bring to a simmer. Cover and cook until orzo is tender and liquid is mostly absorbed (about 10 minutes).
  4. Pour in heavy cream and stir in Parmesan cheese until melted. Add chopped spinach until wilted.
  5. Return chicken to the skillet, spoon sauce over it, and heat through before serving.
