  • 1 teaspoon fresh thyme
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F.
  2. Slice the Yukon gold potatoes thinly using a mandolin or sharp knife.
  3. In a large pot over medium heat, melt the butter and sauté minced garlic until fragrant. Stir in flour to create a roux for 1-2 minutes.
  4. Gradually add heavy cream and stir until thickened (about 5 minutes).
  5. Mix in Parmesan cheese (if using), thyme, salt, and pepper until smooth.
