  • 34 lbs ripe organic tomatoes, cut into wedges
  • 2 garlic bulbs
  • 1/2 onion, chopped
  • 1 Tbsp extra virgin olive oil
  • 1 1/2 cups organic heavy cream
  • 2 cups organic vegetable stock
  • 4 Tbsps tomato paste (organic)
  • 1 tsp sea salt (plus more to taste)
  • 1 tsp On Everything All-Purpose Blend
  • 1/2 tsp smoked paprika

Instructions

  1. Preheat your oven to 400°F (200°C). Spread tomato wedges and whole garlic bulbs on a baking sheet, drizzle with olive oil and sprinkle with sea salt. Roast for about 30-35 minutes until caramelized.
  2. In a large pot over medium heat, sauté chopped onions in olive oil until translucent.
  3. Once tomatoes and garlic are roasted, squeeze the garlic cloves into the pot and add tomatoes along with their juices, vegetable stock, tomato paste, sea salt, On Everything All-Purpose Blend, and smoked paprika.
  4. Bring to a simmer for 5-10 minutes before blending until smooth using an immersion blender.
  5. Reduce heat to low and stir in heavy cream until well combined. Adjust seasoning if necessary.
