  • 34 medium carrots (peeled and chopped)
  • 12 stalks celery (chopped)
  • 1/2 medium onion (chopped)
  • 45 cloves garlic (minced)
  • 4 cups low-sodium chicken stock or broth
  • 1 cup cream or half and half
  • 1 pound potato gnocchi
  • 3 cups baby spinach
  • Salt and black pepper

Instructions

  1. Place chicken, carrots, celery, onion, garlic, salt, and pepper into the slow cooker.
  2. Pour in chicken stock and gently stir. Cover and cook on low for 6-8 hours or high for 4 hours.
  3. Once cooked, shred the chicken directly in the pot using two forks.
  4. In a small bowl, whisk cream with cornstarch until smooth; stir into the slow cooker along with gnocchi and spinach.
  5. Cover and cook on high for another 30-45 minutes until heated through.
  6. Adjust consistency if needed by mixing additional cornstarch with water.
  7. Taste and adjust seasoning as desired before serving.
