  • 1 package (20 oz) cheese tortellini
  • 1 tablespoon olive oil
  • 1 lb beef sirloin, thinly sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • ½ cup shredded provolone cheese
  • ½ cup grated Parmesan cheese
  • Salt and pepper, to taste

Instructions

  1. Cook the tortellini according to package instructions; drain and set aside.
  2. In a large skillet over medium-high heat, add olive oil and sauté the beef until browned (about 5 minutes). Remove beef from skillet.
  3. In the same skillet, sauté green bell pepper, onion, and garlic for about 5-7 minutes until softened.
  4. In a separate saucepan, melt butter over medium heat. Whisk in flour until smooth; gradually add milk while whisking to prevent lumps. Cook until thickened (about 3-4 minutes), then stir in provolone and Parmesan cheeses until melted. Season with salt and pepper.
  5. Combine cooked tortellini, browned beef, and sautéed vegetables into the cheese sauce; stir gently to coat.
  6. Serve hot, garnished with fresh parsley or extra cheese if desired.
