  • 11/2 lbs Little Potatoes Company White Creamer potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • Chopped fresh parsley

Instructions

  1. Prep the Potatoes: Poke each potato with a fork and microwave for 4 minutes. Flip and microwave for another 4 minutes.
  2. Preheat Oven: Set oven to 425°F (220°C) and prepare a baking sheet with parchment paper.
  3. Coat Potatoes: In a bowl, mix microwaved potatoes with olive oil, salt, and pepper until evenly coated.
  4. Smash Potatoes: Place on the baking sheet and gently smash each potato to about 3/8 inch thick.
  5. Bake: Roast for 6 minutes, flip, then bake for an additional 6 minutes until golden brown.
  6. Serve: Remove from the oven and sprinkle with chopped parsley before serving.
