  • 6 cups vegetable stock
  • 1 cup uncooked wild rice
  • 8 ounces baby bella mushrooms, sliced
  • 4 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 ribs celery, diced
  • 1 large sweet potato, peeled and diced
  • 1 small white onion, diced
  • 1 bay leaf
  • 1½ tablespoons Old Bay seasoning
  • 14-ounce can unsweetened coconut milk
  • 2 large handfuls kale, chopped

Instructions

  1. In a large pot over medium heat, sauté onion, carrots, celery, and garlic in a splash of vegetable stock until tender.
  2. Add sliced mushrooms and diced sweet potato; cook for about five minutes until softened.
  3. Stir in vegetable stock, wild rice, bay leaf, Old Bay seasoning, salt, and pepper. Bring to a gentle boil; reduce heat to low and simmer for about 30 minutes.
  4. Once rice is tender, mix in coconut milk and kale; stir well and simmer for an additional 5–10 minutes.
  5. Adjust seasonings to taste before serving hot.
