6 cups vegetable stock
1 cup uncooked wild rice
8 ounces baby bella mushrooms, sliced
4 cloves garlic, minced
2 medium carrots, diced
2 ribs celery, diced
1 large sweet potato, peeled and diced
1 small white onion, diced
1 bay leaf
1½ tablespoons Old Bay seasoning
14-ounce can unsweetened coconut milk
2 large handfuls kale, chopped
Instructions
In a large pot over medium heat, sauté onion, carrots, celery, and garlic in a splash of vegetable stock until tender.
Add sliced mushrooms and diced sweet potato; cook for about five minutes until softened.
Stir in vegetable stock, wild rice, bay leaf, Old Bay seasoning, salt, and pepper. Bring to a gentle boil; reduce heat to low and simmer for about 30 minutes.
Once rice is tender, mix in coconut milk and kale; stir well and simmer for an additional 5–10 minutes.
