  • 1 small onion, diced
  • 1/2 bell pepper, diced
  • 2 cups fresh baby spinach, chopped
  • 1 1/2 cups cottage cheese
  • 4 large eggs
  • 1 cup shredded cheddar cheese (or half cheddar, half mozzarella)
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, heat olive oil and sauté diced onion and bell pepper for 3–4 minutes until soft.
  3. Add chopped spinach and cook until wilted (2–3 minutes). Season with garlic powder, salt, and pepper; let cool slightly.
  4. In a large bowl, whisk together eggs, milk, and cottage cheese until smooth. Stir in Italian seasoning along with additional salt and pepper.
  5. Fold in shredded cheese and cooled vegetable mixture until well combined.
  6. Grease a 9-inch pie dish with olive oil; pour the mixture evenly into the dish.
  7. Bake for 40–45 minutes until golden brown and set in the center. Cool for 5–10 minutes before slicing.
  8. Serve warm or at room temperature.
