  • 1/2 cup powdered sugar
  • 8 oz mascarpone cheese
  • 1/2 cup coconut cream
  • 1 cup heavy cream
  • 14 oz sweetened condensed milk
  • 13.5 oz coconut milk
  • 12 oz evaporated milk
  • 1/2 cup alcohol-free vanilla extract
  • 1 tsp cinnamon
  • 24 ladyfingers
  • Coconut flakes for topping

Instructions

  1. Separate the egg yolks into a bowl and whisk with powdered sugar until pale yellow.
  2. Blend in mascarpone, coconut cream, and half the coconut milk until smooth.
  3. Whip heavy cream with remaining powdered sugar until stiff peaks form; gently fold into the mascarpone mixture.
  4. Chill while preparing the soaking mixture: combine sweetened condensed milk, evaporated milk, remaining coconut milk, vanilla extract, and cinnamon.
  5. Quickly dip ladyfingers in the soaking mixture and layer them in a pan.
  6. Spoon half of the cream mixture over the ladyfingers, sprinkle with coconut flakes, then repeat layering.
  7. Dust with cinnamon and chill for at least 12 hours before serving.
