  • 3 tablespoons red curry paste

  • Fresh cilantro, chili oil or chili crunch, scallions, fresh lime for garnish

Instructions

  1. Sauté the Aromatics: In a large skillet, heat coconut oil over medium heat. Add diced onion and cook until soft, about 4-5 minutes. Stir in ginger, minced garlic, and red chili; cook for an additional 2 minutes.
  2. Add Coconut Milk: Pour in coconut milk, brown sugar, soy sauce, salt, pepper, and red curry paste. Mix well until combined.
  3. Poach the Chicken: Add sliced chicken breast to the skillet. Lower the heat to medium-low and simmer gently for about 15-20 minutes until the chicken is cooked through.
