  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon coconut extract
  • 1 cup coconut milk
  • 1 1/2 cups heavy whipping cream
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 cup sweetened shredded coconut (toasted or fresh)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla and coconut extracts.
  4. Alternately add dry ingredients and coconut milk to the butter mixture until combined.
  5. Divide batter evenly between pans and bake for 25–30 minutes or until golden brown.
  6. Cool cakes completely before removing from pans.
  7. For the frosting, beat cream cheese and powdered sugar until smooth. Whip heavy cream separately until stiff peaks form; fold into cream cheese mixture.
  8. Assemble the cake by spreading frosting between layers and covering the entire cake exterior. Top with toasted shredded coconut.
  9. Chill for at least one hour before slicing.
