  • 3 ½ lbs beef chuck, cut into 2" pieces
  • 4 tablespoons unsalted butter
  • 1 yellow onion, chopped
  • 3 large carrots, peeled and chopped
  • 5 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 2 cups apple vinegar
  • 2 cups beef stock
  • Fresh thyme
  • Bay leaves
  • Frozen pearl onions
  • Cremini mushrooms

Instructions

  1. Preheat your oven to 350°F.
  2. In a Dutch oven, brown the beef cubes seasoned with salt and pepper over medium-high heat. Remove from pot.
  3. Sauté onions and carrots in butter for 2-3 minutes; add garlic, then tomato paste and flour. Stir well.
  4. Add apple vinegar, scraping the pot bottom; then stir in stock and bouillon. Return beef to pot with herbs.
  5. Cover tightly and transfer to the oven for about 2 ½ hours.
  6. Sauté mushrooms and pearl onions separately; then stir into the stew before returning to the oven for an additional hour until tender.
