  • 45 pound turkey breast (bone-in, skin-on)
  • 1/2 cup unsalted butter (softened)
  • Zest of 1 lemon
  • Zest of 1 orange
  • 1 tablespoon fresh rosemary (finely chopped)
  • 1 tablespoon fresh thyme (finely chopped)
  • 1 tablespoon fresh sage (finely chopped)
  • 3 cloves garlic (minced)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup chicken broth
  • 1 onion (quartered)
  • 1 lemon (sliced)
  • 1 orange (sliced)

Instructions

  1. Preheat your oven to the appropriate temperature.
  2. In a bowl, mix softened butter with lemon zest, orange zest, rosemary, thyme, sage, minced garlic, salt, and black pepper until well combined.
  3. Gently loosen the skin from the turkey breast and rub half of the herb mixture beneath the skin. Spread the remaining mixture over the top and inside the cavity.
  4. Stuff the cavity with quartered onion and additional citrus slices.
  5. Pour chicken broth into the bottom of a roasting pan and place the turkey breast inside.
  6. Roast in the oven until golden brown and cooked through; use a meat thermometer for accuracy.
  7. Let rest for at least 15 minutes before carving to allow juices to redistribute.
