  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 1/2 cup milk
  • 1/2 cup light brown sugar, packed
  • 11/2 teaspoons ground cinnamon
  • 1 large apple, peeled and chopped into small pieces
  • 2 tablespoons brown sugar
  • 1/4 teaspoon ground cinnamon
  • 3/4 cups confectioners' sugar
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons water

Instructions

  1. Preheat your oven to 350°F and grease an 8.5 x 4.5 inch loaf pan.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In an electric mixer, beat butter and sugar until smooth; add eggs one at a time.
  4. Gradually mix in dry ingredients alternating with milk until just combined.
  5. In another bowl, mix chopped apples with brown sugar and cinnamon.
  6. Layer half of the batter in the prepared pan, followed by half of the apple mixture; swirl lightly.
  7. Repeat layering with remaining batter and apple mixture.
  8. Bake for 45-55 minutes until a toothpick comes out clean.
  9. Cool before glazing with a simple mixture of confectioners’ sugar and water.
