  • 4 medium carrots, chopped
  • 4 medium potatoes, chopped
  • 2 medium onions, quartered
  • 2 cups beef broth
  • 4 cloves garlic, minced
  • 2 tsp fresh rosemary, chopped
  • 2 tsp fresh thyme, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a large skillet over medium-high heat, add olive oil and sear the chuck roast on all sides for about 3-4 minutes until browned.
