  • 1 1/2 cups chocolate chips
  • 2 cups vegan marshmallows crème
  • 2 cups semi-sweet chocolate chips
  • 2 tablespoons coconut oil

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a mixing bowl, cream together the unsalted butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time followed by vanilla extract until well combined.
  4. In another bowl, whisk together flour, baking soda, and salt.
  5. Gradually mix dry ingredients into the wet mixture until just combined.
  6. Fold in chocolate chips gently.
  7. Press the dough evenly into the prepared baking dish and bake for 20-25 minutes until golden brown. Allow to cool completely.
  8. Spread the vegan marshmallows crème evenly over the cooled cookie base.
  9. Melt semi-sweet chocolate chips with coconut oil in short bursts in the microwave until smooth.
