  • ½ cup olive oil
  • ½ cup brown sugar

  • 2 eggs (room temperature)
  • 1 tsp vanilla extract
  • ½ cup sour cream
  • 1 cup ripe bananas (mashed)
  • ½ cup dark chocolate chips
  • ½ cup semi-sweet chocolate chips
  • 1 tbsp all-purpose flour (for dusting chocolate chips)
  • ¼ banana (2 long thin slices off of a banana)
  • 1 tsp granulated sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, salt, and espresso powder.
  3. In another bowl, mix olive oil, sugars, eggs, vanilla, sour cream, and mashed bananas until smooth.
  4. Fold the dry ingredients into the wet mixture until just combined.
  5. Dust chocolate chips with flour before folding them into the batter.
  6. Pour the batter into the prepared pan, top with banana slices and sprinkle with sugar.
  7. Bake for about 55 minutes or until a toothpick comes out clean.
  8. Cool for 10 minutes in the pan before transferring to a wire rack.
