  • 1/2 cup vanilla protein powder
  • 1/4 cup cashew butter (or almond/sunflower seed butter)
  • 23 tbsp milk (dairy or non-dairy)
  • 1/4 cup mini chocolate chips
  • 2 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • A pinch of salt
  • 1 cup milk chocolate chips
  • 1 tsp coconut oil (or vegetable oil)

Instructions

  1. In a medium bowl, whisk together almond flour, protein powder, and salt.
  2. In another bowl, mix cashew butter, milk, honey/maple syrup, and vanilla until smooth.
  3. Combine wet and dry mixtures until well blended; fold in mini chocolate chips.
  4. If too dry, add more milk gradually until slightly sticky.
  5. Roll into 1-inch balls and chill for at least 30 minutes.
  6. Melt chocolate chips with coconut oil; dip each ball in the mixture and sprinkle extra mini chips on top.
  7. Return to the fridge for an additional 15-20 minutes to set.
