  • ½ tsp salt
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ cup unsalted butter (cold)
  • ¾ cup mini semi-sweet chocolate chips
  • 1 cup heavy whipping cream (cold)
  • 1 tsp pure vanilla extract
  • 1 large egg
  • 1 tbsp heavy whipping cream (for glaze)
  • 1 cup powdered sugar (sifted)
  • 1 tsp instant espresso powder (for glaze)
  • 1 tbsp brewed coffee (or espresso)
  • 12 tbsp milk or cream (or water)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, brown sugar, espresso powder, salt, baking powder, and baking soda.
  3. Cut cold butter into the dry ingredients until coarse crumbs form. Stir in chocolate chips.
  4. In another bowl, mix cold heavy cream and vanilla extract. Gradually add to the dry mixture until just combined; do not over-mix.
  5. Turn dough onto a floured surface and shape it into an 8-inch circle. Cut into triangles and refrigerate for at least 30 minutes.
  6. Brush the tops with beaten egg and sprinkle with turbinado sugar before baking for 20-25 minutes until golden brown.
  7. Let cool on a wire rack before glazing.
