  • ½ cup unsalted butter (melted)
  • 1 cup mascarpone cheese
  • ½ cup confectioner’s sugar
  • 1½ tsp vanilla extract
  • ¼ tsp ground cinnamon
  • 23 tsp lemon zest
  • 1 cup whole milk ricotta cheese
  • ¾ cup heavy whipping cream
  • 1â…“ cups mini chocolate chips (divided)

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix vanilla wafer crumbs, brown sugar, and melted butter until combined. Press mixture into a pie dish and bake for about 10 minutes until golden. Let cool.
  2. In another bowl, blend mascarpone cheese, confectioner’s sugar, vanilla extract, ground cinnamon, and lemon zest until smooth. Gently fold in the ricotta cheese.
  3. Whip heavy cream until stiff peaks form; fold into the cheese mixture along with one cup of chocolate chips.
  4. Pour filling into cooled crust and top with remaining chocolate chips. Chill in the refrigerator for at least 8 hours or overnight before serving.
