  • 1 cup fresh parsley, chopped
  • 4 garlic cloves, minced
  • 1/4 cup apple cider vinegar
  • 1/2 cup extra virgin olive oil
  • 1 tsp red pepper flakes (adjust to taste)
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine chopped parsley, minced garlic, apple cider vinegar, olive oil, red pepper flakes, salt, and pepper to create the chimichurri marinade.
  2. Place chicken breasts in a resealable bag or bowl and pour half of the chimichurri sauce over them. Ensure all pieces are well coated and let them marinate for at least 30 minutes.
  3. Preheat your grill to medium heat (350°F) or oven to 400°F (200°C).
  4. Remove chicken from marinade and shake off excess sauce. Grill for about 6-7 minutes per side or bake for 25-30 minutes until fully cooked.
  5. Allow chicken to rest for five minutes before slicing and drizzle remaining chimichurri on top before serving.
