  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cloves fresh garlic, minced
  • 1 can (4 oz) canned green chiles
  • 2 cups shredded cheese (cheddar and Monterey Jack mix)
  • 1 cup fine cornmeal
  • 2 cups low-sodium chicken broth
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat olive oil in a skillet over medium heat; sauté minced garlic until fragrant.
  3. Add chicken breasts; cook for 6-7 minutes on each side until cooked through. Shred the chicken with two forks.
  4. In a bowl, combine shredded chicken, green chiles, cumin, chili powder, salt, and pepper.
  5. Whisk cornmeal with chicken broth until smooth; let it thicken for 5 minutes.
  6. Grease a baking dish; pour half of the cornmeal mixture as the base layer. Spread the chicken mixture on top followed by half of the cheese. Pour remaining cornmeal batter and sprinkle the rest of the cheese on top.
  7. Bake uncovered for 30-35 minutes until golden brown.
