  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup chicken broth
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, add olive oil. Season chicken breasts with salt, pepper, and dried thyme. Sear for 5-6 minutes on each side until golden.
  3. Remove chicken and sauté garlic in the same skillet for one minute. Add mushrooms and cook until soft, then stir in spinach until wilted.
  4. Pour in heavy cream and chicken broth; simmer for about 3-4 minutes until slightly thickened.
  5. Place seared chicken in a greased baking dish and pour the creamy mushroom-spinach sauce over them. Top with mozzarella and Parmesan cheese.
  6. Bake for 15-20 minutes until bubbly and golden brown.
