  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach leaves
  • 8 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1/2 cup Panko breadcrumbs
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1 cup marinara sauce (for serving)

Instructions

  1. Preheat the oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. In a bowl, combine softened cream cheese, mozzarella, spinach, garlic powder, salt, and pepper until smooth.
  3. Flatten each chicken breast to about half an inch thick using a meat mallet or rolling pin.
  4. Spread the creamy filling over each chicken breast and roll them tightly.
  5. Mix Panko breadcrumbs with olive oil in a shallow dish and coat each roll before placing seam-side down in the baking dish.
  6. Bake for 25-30 minutes until golden brown and cooked through at an internal temperature of 165°F.
  7. Serve hot with marinara sauce drizzled on top or on the side.
