  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon coconut extract
  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • ½ teaspoon sea salt
  • 1 ½ cups sweetened coconut flakes, divided

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a stand mixer, beat softened butter, granulated sugar, and brown sugar until light and fluffy (about 2 minutes). Add vanilla and coconut extracts with eggs; beat on high until well combined.
  3. In another bowl, whisk together flour, baking soda, cream of tartar, and sea salt.
  4. Gradually add dry ingredients to the butter mixture while mixing on low speed until combined.
  5. Fold in most coconut flakes (reserve some for topping).
  6. Drop balls of dough onto prepared baking sheets about 2 inches apart; sprinkle reserved coconut on top.
  7. Bake for about 9-10 minutes until lightly golden brown.
  8. Transfer cookies to a cooling rack to cool completely.
