  • 2 cups mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup cherry juice
  • 1 cup fresh cherries, pitted and chopped
  • 1 package ladyfingers
  • 1/4 cup granulated sugar
  • 2 tablespoons cherry preserves
  • 1 teaspoon vanilla extract
  • 1/4 cup cocoa powder

Instructions

  1. In a mixing bowl, whip together 2 cups mascarpone cheese and 1 cup heavy cream until smooth and fluffy.
  2. Stir in 1/2 cup cherry juice and 1 teaspoon vanilla extract until well combined.
  3. In another bowl, mix 1/4 cup granulated sugar with 2 tablespoons cherry preserves, then fold into the mascarpone mixture.
  4. Gently mix in 1 cup chopped fresh cherries.
  5. Dip ladyfingers quickly in a mixture of cherry juice and layer them in a dish.
  6. Spread half of the mascarpone mixture over the ladyfingers; repeat with another layer of dipped ladyfingers and remaining cream mixture.
  7. Refrigerate for at least 4 hours or preferably overnight before serving.
  8. Dust with cocoa powder just before serving.
