Ingredients

Scale
  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup cocoa powder
  • 1/2 teaspoon salt
  • 16 oz cream cheese (softened)
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1 cup granulated sugar (for caramel sauce)
  • 6 tablespoons unsalted butter (for caramel sauce)
  • 1/2 cup heavy cream (for caramel)
  • 1 teaspoon sea salt

Instructions

  1. Preheat your oven to 350°F (175°C). In a saucepan, melt unsalted butter and mix with granulated sugar. Add eggs and vanilla, stirring until smooth.
  2. Sift together flour, cocoa powder, and salt in a separate bowl. Fold the dry ingredients into the wet mixture until just combined.
  3. Pour the brownie batter into a greased 9-inch springform pan and bake for 25-30 minutes until set but soft in the middle.
  4. In another bowl, beat softened cream cheese, sugar, eggs, vanilla extract, and sour cream until creamy. Pour over cooled brownies.
  5. Bake for an additional 30-35 minutes until cheesecake is set but slightly jiggly in the center.
  6. For caramel sauce, melt sugar until golden brown, then stir in butter and heavy cream (be cautious of bubbling). Add sea salt.
  7. Once cooled completely, drizzle caramel over cheesecake and refrigerate for at least 2 hours before serving.
