  • 16 oz cream cheese (softened)
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3 medium Granny Smith apples (peeled and diced)
  • 2 tbsp lemon juice
  • 1/4 cup brown sugar
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/4 cup unsalted butter (cold and cubed)
  • 1/4 cup chopped pecans (optional)
  • 1 cup granulated sugar for caramel
  • 1/4 cup water for caramel
  • 1/2 cup heavy cream for caramel
  • 2 tbsp unsalted butter for caramel
  • 1/4 tsp salt for caramel

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper.
  2. In a bowl, mix graham cracker crumbs, melted butter, granulated sugar, and cinnamon; press into the bottom of the pan.
  3. Beat cream cheese and granulated sugar until smooth; add eggs and vanilla extract, mixing until combined.
  4. Toss diced apples with lemon juice, brown sugar, cinnamon, and nutmeg; let sit for 10 minutes.
  5. Spread cheesecake filling over crust, layer spiced apples on top, then sprinkle crumble topping made from flour, brown sugar, and cold butter cubes.
  6. Bake for about 45 minutes or until set; cool completely before slicing.
  7. For caramel sauce, heat granulated sugar and water until dissolved; stir in heavy cream, butter, and salt.
