  • 2 chicken breasts, cubed
  • 1 tablespoon Cajun seasoning
  • 8 oz cream cheese, softened
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Chopped parsley (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook pasta according to package instructions until al dente; drain and set aside.
  3. In a skillet over medium heat, sauté cubed chicken with Cajun seasoning until fully cooked (5–7 minutes). Remove and set aside.
  4. In the same skillet, sauté diced onion and bell pepper until softened (3–4 minutes). Add minced garlic and cook for another minute.
  5. Stir in softened cream cheese until melted; then pour in heavy cream and chicken broth. Mix in both cheeses, paprika, salt, and pepper until well combined.
  6. Return chicken and pasta to the skillet; mix gently to coat everything in the sauce.
  7. Transfer mixture to a greased 9×13-inch baking dish and bake for 20–25 minutes or until bubbly and golden on top.
