  • Olive oil
  • Butter
  • Fresh parsley
  • Warm milk
  • Active dry yeast
  • Honey
  • All-purpose flour
  • Bread flour
  • Milk powder (optional)
  • Egg yolks
  • Salt
  • Sugar
  • Mozzarella cheese

Instructions

  1. Roast the Garlic: Cut the top off a whole garlic head, drizzle with olive oil and salt, wrap in foil, and roast at 160°C (320°F) for about 2 hours until soft.
  2. Prepare Garlic Butter: Mix roasted garlic with softened butter, chopped parsley, and garlic oil.
  3. Make Yeast Mixture: Combine warm milk, yeast, and honey in a bowl; let sit for 10 minutes until frothy.
  4. Combine Dough Ingredients: In a bowl, mix all-purpose flour, bread flour, sugar, optional milk powder, butter, salt, egg yolks, and the yeast mixture.
  5. Knead Dough: Knead on medium speed for 15–20 minutes until smooth.
  6. Proof Dough: Place in a covered bowl in a warm spot for about 1.5 hours until doubled.
  7. Roll Out Dough: Roll dough to about 1/4 cm thickness and spread garlic butter evenly over it.
  8. Add Mozzarella: Sprinkle mozzarella cheese generously over the dough and roll into a log shape.
  9. Cut Dough: Cut the rolled log into six equal portions.
  10. Second Proof: Place rolls on a lined baking sheet and let proof for an additional 30 minutes.
  11. Bake: Preheat oven to 175°C (350°F). Brush rolls with an egg wash before baking for 20–25 minutes until golden brown.
  12. Decorate: Brush baked rolls with leftover garlic butter and sprinkle with parsley before serving.
