  • 1 tablespoon coconut oil or butter (for melting)

Instructions

  1. In a medium bowl, mix together creamy peanut butter, softened butter, powdered sugar, and vanilla extract until smooth.
  2. Break each graham cracker in half to create squares. Spread about 1 tablespoon of the peanut butter mixture onto one half and top with another cracker half to form a sandwich. Repeat with remaining ingredients.
  3. In a microwave-safe bowl, melt chocolate chips with coconut oil in 20-second intervals, stirring until smooth.
  4. Dip each sandwich halfway into the melted chocolate or drizzle it over the tops.
