  • 1 teaspoon baking soda
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • 5 tablespoons unsalted butter (softened)
  • 3/4 cup light brown sugar (packed)
  • 1 teaspoon cinnamon
  • 2 tablespoons cake flour
  • 1 cup powdered sugar
  • 1/2 teaspoon cinnamon
  • 3 tablespoons unsalted butter (melted and cooled)
  • 2 1/2 tablespoons milk

Instructions

  1. Cream room temperature butter, granulated sugar, and light brown sugar until fluffy.
  2. Add eggs one at a time and mix in vanilla extract.
  3. Whisk together cake flour, cornstarch, baking soda, baking powder, and salt in another bowl. Gradually add this dry mixture to the wet ingredients.
  4. Chill the dough in the refrigerator for about an hour.
  5. Prepare the filling by mixing softened butter, brown sugar, cinnamon, and cake flour until smooth.
  6. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Scoop dough into balls, form wells in half of them, fill with cinnamon mixture, and top with another dough ball.
  8. Bake for 11-13 minutes until lightly golden.
