Instructions

  1. Brown the Butter: In a saucepan over medium heat, melt the butter until golden brown and fragrant. Stir constantly to prevent burning. Transfer to a bowl, mix in espresso powder, and chill for 1-2 hours until firm.
  2. Prepare the Dough: Beat together the cooled browned butter and sugars in a stand mixer on medium-high speed until fluffy (3-4 minutes).
  3. Add Egg and Vanilla: Mix in the egg and vanilla extract until smooth.
  4. Incorporate Dry Ingredients: On low speed, gently combine baking powder, baking soda, salt, and flour until just mixed.
  5. Fold in Toffee Bits: Carefully incorporate chocolate toffee bits into the dough.
  6. Chill Dough: Scoop large balls of dough onto a tray and refrigerate for at least a few hours (up to 24 hours recommended).
  7. Preheat Oven & Bake: Preheat oven to 350°F (175°C). Place dough balls on a lined baking sheet, sprinkle with flaked sea salt, and bake for about 11-13 minutes until edges are golden.
