  • ¾ cup peach preserves
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons soy sauce
  • 2 teaspoons apple cider vinegar
  • 4 salmon filets (about 1½ pounds)
  • 2 medium peaches (pitted and thinly sliced)
  • Fresh parsley for garnish

Instructions

  1. In a bowl, mix peach preserves, olive oil, soy sauce, apple cider vinegar, garlic, salt, black pepper, and red pepper flakes to create the marinade. Reserve half for glazing later.
  2. Place salmon in a resealable bag and pour in remaining marinade. Seal and marinate for at least 30 minutes.
  3. Preheat your oven to 375°F. Heat olive oil in an oven-safe skillet over medium-high heat.
  4. Sear the salmon fillets skin side up for 2-3 minutes until golden brown. Flip to skin side down and add sliced peaches around them.
  5. Pour reserved marinade over salmon and peaches.
  6. Bake for 12-15 minutes until salmon reaches an internal temperature of 145°F.
  7. Serve warm garnished with fresh parsley.
