  • 14.5 ounces black beans
  • ½ cup frozen yellow corn
  • 4 Tablespoons olive oil
  • 3 Tablespoons honey
  • 3 Tablespoons lime juice
  • 1 ½ cups green pepper
  • 1 cup red pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon ground coriander
  • 1 teaspoon sea salt
  • ¼ teaspoon pepper
  • Corn or flour tortillas

Instructions

  1. Preheat oven to 425°F.
  2. In a bowl, toss sweet potato cubes with olive oil and spice mixture.
  3. Spread on a baking sheet and roast for 20 minutes.
  4. Prepare peppers in the same manner; mix with olive oil and seasoning.
  5. Combine roasted sweet potatoes with peppers; roast for an additional 20 minutes.
