  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 tablespoon vanilla extract
  • 8 oz cream cheese (room temperature)
  • 1/4 cup granulated sugar
  • 1 large egg yolk (room temperature)
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin pan with paper baking cups.
  2. In a medium bowl, whisk together the flour, pumpkin spice, baking soda, and salt until well combined.
  3. In a large bowl, whisk together the pumpkin puree, granulated sugar, and brown sugar until smooth. Beat in the eggs one at a time along with the vegetable oil and vanilla extract. Slowly add in your flour mixture until there are no lumps.
  4. In another medium bowl, beat the cream cheese until smooth. Then add in sugar, egg yolk, and vanilla extract, mixing until well combined.
  5. Top each muffin with about one tablespoon of cream cheese mixture. Using a toothpick or skewer, gently swirl it into the batter.
