  • 4 yellow onions (thinly sliced)
  • 2 pounds Yukon Gold potatoes (washed)
  • 4 tablespoons salted butter (or non-dairy butter)
  • 3/4 cup half & half or full-fat coconut milk
  • 1 teaspoon kosher salt
  • 1 cup Parmesan cheese (freshly grated)
  • Fresh herbs (chives, thyme, sage)

Instructions

  1. Heat olive oil in a skillet over medium heat. Add sliced onions and cook until golden brown and caramelized (about 40-50 minutes). Stir occasionally.
  2. Meanwhile, wash and chop Yukon Gold potatoes into small pieces. Boil in salted water until fork-tender (about 20 minutes).
  3. Drain cooked potatoes, then mash in the pot with butter, kosher salt, and half & half or coconut milk until smooth.
  4. Fold in the caramelized onions and Parmesan cheese until well combined.
