  • 2 large chicken breasts
  • 4 ounces cream cheese (softened)
  • 3/4 cup heavy cream
  • 4 cloves garlic (minced)
  • 1 teaspoon Italian seasoning
  • 1/4 cup Parmesan cheese (grated)
  • 3/4 cup mozzarella cheese (grated)
  • 8 ounces sun-dried tomatoes (chopped)
  • 3/4 cup fresh spinach (chopped)

Instructions

  1. Preheat your oven to 400°F (204°C).
  2. Slice chicken breasts in half lengthwise and place them in a baking dish. Season with salt and pepper, then sprinkle half of the minced garlic over them.
  3. In a mixing bowl, combine cream cheese and heavy cream; blend until smooth. Stir in remaining garlic, onion powder, paprika, Italian seasoning, salt, pepper, Parmesan cheese, and half of the mozzarella.
  4. Spread the mixture over the chicken fillets and top with sun-dried tomatoes and reserved oil.
  5. Cover with foil and bake for 20 minutes or until chicken reaches an internal temperature of 165°F (74°C).
  6. Remove foil, stir in spinach, and add remaining mozzarella. Bake uncovered for another 10 minutes until cheese melts.
