  • 8 eggroll wrappers
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 2 jalapeño peppers, seeded and finely chopped
  • 1 green onion, finely chopped
  • Vegetable oil for frying

Instructions

  1. In a mixing bowl, combine softened cream cheese, shredded cheddar, chopped jalapeños, green onion, garlic powder, salt, and pepper until well mixed.
  2. Place an eggroll wrapper on a clean surface. Add about 2 tablespoons of filling diagonally in the center. Fold over the bottom corner, tuck in the sides, and roll tightly to seal.
  3. Heat vegetable oil in a deep skillet to 350°F (175°C). Fry eggrolls seam side down for about 3-4 minutes until golden brown.
  4. Remove from oil and drain on paper towels. Serve hot with your favorite dipping sauce.
