  • 3 cups butternut squash, peeled, seeded, cubed
  • 340 g Brussels sprouts, trimmed and halved
  • 225 g bow tie pasta
  • 340 g cooked smoked sausage (chicken or turkey)
  • 5 cloves garlic, minced
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • Salt and pepper to taste
  • ¼ teaspoon smoked paprika
  • Fresh thyme leaves

Instructions

  1. Preheat oven to 200°C (400°F). Toss cubed butternut squash with olive oil, salt, and pepper; roast on a lined baking sheet for 15-20 minutes.
  2. On another baking sheet, toss Brussels sprouts with olive oil, salt, and pepper; roast alongside the squash for 20-30 minutes until caramelized.
  3. Cook bow tie pasta in salted boiling water according to package directions; reserve some pasta water before draining.
  4. In a skillet over medium heat, sauté sliced smoked sausage until browned. Remove from skillet.
  5. In the same skillet, add minced garlic and sauté until fragrant; melt in butter and then add cooked pasta along with reserved pasta water, salt, pepper, and smoked paprika.
  6. Fold in roasted vegetables and sausage; mix well to combine flavors.
