  • 12 thick-cut slices of brioche bread
  • 1 ¾ lb apples (such as Gala and Granny Smith)
  • 4 tbsp salted butter
  • 2 1/2 tbsp all-purpose flour
  • 1 tsp apple pie spice
  • 3/4 cup brown sugar
  • 1/2 cup water
  • 1 cup milk of choice
  • 1 cup heavy cream
  • 1 1/2 tbsp salted butter
  • 1/4 cup + 3 tbsp granulated sugar
  • Pinch of salt
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 4 eggs
  • Turbinado sugar, for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a saucepan, melt butter; stir in flour and apple pie spice before adding diced apples and water. Cook until apples are soft.
  3. Strain excess juices from the apple mixture.
  4. For the custard, whisk together milk, heavy cream, remaining butter, sugars, salt, vanilla extract, cinnamon, and eggs until combined.
  5. Cut brioche into cubes and layer half in the prepared dish followed by half the apple filling; repeat layers finishing with apples on top.
  6. Pour custard over layers ensuring all pieces are coated.
  7. Bake for 35-40 minutes until golden brown on top but slightly wobbly in the center.
  8. Cool for ten minutes before serving warm with vanilla ice cream.
