  • 1½ cups cooking oil
  • 2 cups granulated sugar
  • 4 large eggs
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • 1 teaspoon salt
  • 2 teaspoons vanilla extract
  • 3½ cups Granny Smith apples, peeled and finely chopped
  • 1 cup pecans, finely chopped
  • ¾ cup unsalted butter
  • 1 cup light brown sugar
  • ¼ cup whole milk

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a cake pan.
  2. In a large bowl, mix cooking oil and granulated sugar until combined. Add eggs one at a time, mixing well after each addition.
  3. In another bowl, sift together flour, baking soda, cinnamon, and salt. Gradually add to the wet mixture until just combined. Fold in chopped apples and pecans.
  4. Pour the batter into the prepared pan and smooth the top. Bake for about 60 minutes or until a toothpick comes out clean.
  5. While cooling, prepare the caramel glaze by melting butter in a saucepan over medium heat. Stir in brown sugar until dissolved; then add milk and vanilla, simmering until slightly thickened.
  6. Once the cake is completely cool, drizzle the caramel glaze generously over the top.
